When they introduced their curry powder in 1926, they gave Japan a flavor that would become as fundamental to everyday life as ramen or soba — woven into home kitchens, school lunches, and neighborhood restaurants across the country. Japanese curry is its own thing: deeper, richer, and more savory than its South Asian roots, built on a slow-cooked roux that's become one of the most beloved comfort foods in the world. At the fire stage, we're serving it as it deserves — as a proper midday meal, with the simplicity of a great Japanese lunch.
