Hashiri Summer Kaiseki

This Food Concert welcomed the summer with a magnificent multi-course dinner, where local ingredients and masterful presentations took center stage.

Michelin-starred chefs Shinichiro Takagi and Billy Kong embraced the essence of "Hashiri," meaning "early season." Guests enjoyed a front-row view as Chef Shinichiro grilled salmon for his take on Gohan — salmon rice with onion, sesame, and shiso leaf. Their creations, including tuna tataki with scallop and grilled eel with sansho pepper, captured the vibrant spirit of this special time of year.
